Let's make cookies to celebrate. In our house, we love cookies. One recipe we always use is a Quick Peanut Butter Cookie recipe from the Southern Living 2002 cookbook. These little guys are quick and only have four ingredients. Amazing. I have put chocolate chips in them and even a chocolate kiss on top of them. Many, many times I have eaten them plain. With this whole fence project I was wanting to make something sweet to enjoy after long days of working hard. What is better than milk and cookies? I adapted the recipe to include almond butter instead of peanut butter and they were pretty darn good.
Quick Almond Butter Cookies
Adapted from the Quick Peanut Butter Cookie recipe in Southern Living 2002 cookbook
1 cup almond butter
1 large egg
1 teaspoon vanilla extract
Combine all ingredients into a bowl and stir them until blended well. Roll cookies into 3/4 inch balls (or bigger if desired). Bake at 325 degrees for about 10 minutes. Let these little guys cool for a few minutes on the baking sheets then transfer to serve.
