Do you make your own granola? There are a ton of variations out there and is fun to play with to make your very own favorite. This recipe is my current favorite and it uses my new found friend - coconut oil. Yum. I double the recipe because it goes fast!
Granola
(recipe modified from Chosen Foods)
5 cups oats
1 cup coconut flakes
1/2 cup slivered almonds
1/2 cup sugar
1/2 cup honey
1/4 cup coconut oil
1/2 tbs cinnamon
1/2 tbs nutmeg
1/2 cup raisins
1/2 cup dried cranberries
1/3 cup chocolate chips
Preheat oven to 275 degrees. Mix all ingredients together except dried fruit and chocolate chips. Spread out on cookie sheet. Bake for 45 minutes or so, stirring occasionally. Take out of the oven and let completely cool. Add in the dried fruit and chocolate chips. Store in an air tight container.
